Beyond Baba Ganoush: My Original Eggplant Recipe for a Flavorful Twist

Eggplant. It's a versatile vegetable that can be roasted, grilled, fried, or even baked. But for many, the go-to eggplant dish is baba ganoush, a delicious but often predictable dip.

 

Today, I'm sharing my own original eggplant recipe, a dish that takes this humble vegetable to new heights of flavor and texture. It's a recipe that I've been perfecting for years, inspired by my love for bold flavors and a touch of culinary adventure.

1. Preheat oven to 400°F (200°C). Toss the diced eggplant with olive oil, salt, and pepper. Spread the eggplant in a single layer on a baking sheet and roast for 30 minutes, or until tender and slightly browned.

2. While the eggplant is roasting, heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.

3. Stir in the diced tomatoes, chicken broth, red wine vinegar, tomato paste, oregano, paprika, and red pepper flakes (if using). Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the sauce has thickened.

4. Add the roasted eggplant to the sauce and stir to combine. Simmer for 5 minutes more, or until the eggplant is heated through.

5. Stir in the parsley and serve immediately over rice or pasta.

 

My Original Twist:
